Oyster Farm Tour to Brooklyn, NSW
In our experience at Urban Graze Cooking School, most people’s experiences of eating oysters is that of a pre-opened oyster, sometimes several days after being plucked from the ocean, shucked and then rinsed under fresh water and washed of any natural salty flavours the poor oyster had in the first place. This is one of the main reasons some people don’t like oysters.
Nothing compares to an oyster freshly shucked from the river or ocean complete with the oyster liquor and perhaps a squeeze of lime. This is what converted both of us many years ago and we have never turned back.
We will be meeting at the farm on the Hawkesbury River in Brooklyn and will introduce you to the new Triploid oyster that is being farmed just 45 minutes from Sydney. The triploid oyster is a cross between the Sydney Rock and the Pacific and is available virtually all year round.
The oyster farmers will guide you through how the Hawkesbury River oysters grow from tiny spat (baby oysters) to full maturity, and will explain the importance of tides, weather, and the environment.
The tour includes sparkling wine with the meal, a shucking demonstration, some accompaniments to go with the oysters, local Prawns, Darling Mills salad greens, sourdough and of course plenty of oysters for everyone. Morning Tea and bottled water are also supplied.
Oysters can be purchased from the farm to take home at wholesale prices as well as our premium Messermeister oyster shuckers.
What to bring?
Sunscreen and a hat, sensible shoes and something warm to wear in the winter. Remember too that oysters in the cooler months is the best time to eat them. Parking and our meeting place is at the Mooney Mooney Club on Kowan Rd, Mooney Mooney.
